Homemade Mayo

Simple to make homemade mayonnaise.

Ingredients

  • 1 freshest possible egg yolk
  • 2 tsp apple cider vinegar
  • 1 tsp water
  • 1 tsp lemon juice fresh
  • 1/4 tsp dry mustard
  • pinch sea salt
  • pinch of cayenne
  • 1/2 C avocado oil

Instructions

  1. Set all ingredients out ahead of time and allow to come to room temperature
  2. Put egg yolk, apple cider vinegar, lemon juice, dry mustard, sea salt and cayenne into the bottom of a wide mouthed mason jar or a bowl
  3. Very slowly, just a few drops at at time, add the oil and blend or whip. If you add too much at once the mayonnaise will separate rather than emulsify
  4. Once half of your oil is added you may add the remaining oil a bit quicker until all is blended and mayo is thick and creamy.

Recipe Notes

Keep homemade mayo in refrigerator but use quickly, it will only keep for a few days
