Savoury Low Carb Slaw

Low carb coleslawThis summer’s garden has grown 6 big and beautiful cabbages, three green and three red ones. With our cool weather this year I have not had them split the way they did last year which is a huge bonus. It means that at least I haven’t had to harvest and then deal with 6 full grown cabbages all at one time. Thank goodness! The three red ones are still happily nested in the garden waiting for me to use up the end of the last head I cut.

I have already made sauerkraut for the season, though I may make some more, and I’ve made some tasty slow braised cabbage that is so yummy. (I’ll post soon) So this week I was once again on the hunt for a low carb coleslaw recipe that did not contain sugar. I have made a mexican version but I was looking for a way to increase the fat a bit by using the more traditional mayonnaise.

I found an answer in a seemingly unlikely place. Maybe it just seemed unlikely to me…

I had purchased the cook book Man Made Meals, by Stephen Raichlen for my son AJ last Christmas and after thumbing through it decided that I needed my own copy. There were just too many amazing looking recipes not to own this book. Since it is geared toward simple(ish) recipes for guys I wondered if coleslaw, which seams kinda basic, might be included in the book. Sure enough, there are three recipes for slaw, including this one, a creamy horseradish slaw. Bingo!

Using my own homemade mayo, which is so great, and has no sugar, this recipe makes a uniquely creamy slaw that was different than the super sweet one usually found. Though I don’t find the horseradish to be super strong despite using a very hot one, you could adjust the taste using more or less horseradish or taming it with a bit more mayo.

I love it. Yay!

Cabbage is an awesome, healthful, and low carb vegetable that is easy to incorporate into an LCHF diet. The only trouble is that cabbages are huge, and there are only 3 of us, and I’m only eating like 1 cup at a time. That means I’m gonna have to get creative.

Savoury Low Carb Slaw

A great slaw for horseradish lovers and those watching their carbs/

Ingredients

  • 1/4 of a medium head of cabbage cored and sliced finely
  • 1 small carrot peeled and grated (optional)
  • 1/3 C no/low sugar mayonnaise
  • 2 Tbsp prepared horseradish or to taste depending on hotness
  • 2 Tbsp Dijon mustard
  • Kosher salt
  • Pepper
  • Celery seeds

Instructions

  1. Mix shredded cabbage and carrot (if using) into a medium sized serving bowl
  2. In small bowl mix mayonnaise, horseradish and dijon mustard until smooth and creamy
  3. Toss dressing with cabbage mix, add salt and pepper to taste
  4. Sprinkle celery seeds over top or mix in, as preferred

Recipe Notes

Slaw will keep in refrigerator for at least a few days
