I do love me a green smoothie in the morning. The only trouble is, they make me cold. Like from the inside out cold. So on a cool morning I find it harder to be hankering for a frozen green concoction even though I know they are a great way to get some extra veggies into my diet. I have to drink my smoothie before I get into the shower so that I can warm back up before starting the day.
Some days, a hot breakfast is really just what the doctor ordered. Those days are the ones that I usually start with an egg or two.
Eggs seem kinda lonely on a plate all by themselves though, and without the toast there is nothing to soak up the runny yolks.
Luckily eggs go pretty great on top of other things. I like my eggs over arugula, wilted greens and also this way, over grated and sautéed sweet potato.
This super basic recipe came from Michelle Tam at nomnompaleo. I think it is in her book.
I’m not posting a formal recipe because it is so simple I don’t think it warrants one.
All you need to do is to grate up some sweet potato. I find that one medium sweet potato (or yam depending on your preference) is enough for two servings. If you are only making it for one you can grate it all and save half for tomorrow.
Add a sprinkling of garlic powder and onion powder and some salt and pepper to the sweet potato. I usually just do this right on the cutting board, tossing it gently to distribute the seasoning.
Then, in a small frying pan, heat up a bit of ghee or coconut oil. Fry your grated sweet potato until it is lightly browned and cooked through and then transfer it to a shallow bowl or small plate.
In the same pan, heat just a bit more oil and then fry your eggs however you normally would. I like my egg yolks to stay runny as the yolk flavours whatever vegetable I’m going to put them over and makes the whole dish nice and creamy.
When your eggs are done to your liking just plop them on top of your hash and head to the table. This isn’t necessarily the prettiest dish, but it is really yummy and it hits the spot when I’m looking for something warm.
Sweet potatoes are definitely higher in carbohydrate than arugula so I try to do these on days when I’m going to be a bit more active, or when I really crave them – which is fairly often.
