Fresh Mango Salsa

Bowl of fresh mango salsaI love mango salsa, especially on meats like chicken or fresh fish. So I decided to mix some up to serve with some lovely wild sockeye salmon fillets that I am going to barbecue tonight (recipe shortly).

I always have frozen mango on hand as I love to use it in a morning smoothy. It works perfectly for salsa too and is really so much easier. Costco often carries an organic variety too, which is a huge bonus since organic mangoes are not something I think I’ve ever seen in the grocery store.

Fresh Mango Salsa in bowlYou really only have to thaw them for a few minutes and then they are easily diced with a sharp knife. Add a little bell pepper, some jalapeño, green onion, cilantro and lime and you are set to turn any grilled meat into a fresh summery something special.

This fresh summery salsa is great over grilled chicken or fish, or served with tortilla chips. It is best made at least a few hours ahead of time so that the ingredients can mingle and get to know each other.

Ingredients

  • 2 Cups mango fresh or frozen
  • 1 small red pepper
  • 1 small jalapeño seeds removed
  • 4-5 green onions sliced
  • 1/4 cup cilantro or to taste
  • 1 small lime

Instructions

  1. Dice mango, peppers and green onion into medium sized bowl
  2. Chop cilantro finely and add to mixture
  3. juice lime into bowl
  4. Mix all ingredients together, allow to sit for a few hours in the refrigerator
  5. Serve over grilled meats
