I love mango salsa, especially on meats like chicken or fresh fish. So I decided to mix some up to serve with some lovely wild sockeye salmon fillets that I am going to barbecue tonight (recipe shortly).
I always have frozen mango on hand as I love to use it in a morning smoothy. It works perfectly for salsa too and is really so much easier. Costco often carries an organic variety too, which is a huge bonus since organic mangoes are not something I think I’ve ever seen in the grocery store.
You really only have to thaw them for a few minutes and then they are easily diced with a sharp knife. Add a little bell pepper, some jalapeño, green onion, cilantro and lime and you are set to turn any grilled meat into a fresh summery something special.
